Our Jamaican cookery course is designed for individuals who want to combine acquiring the knowledge & skills of one of the Caribbean’s most exciting and tantalising fusion cuisines with an opportunity to enjoy Jamaica’s tranquil lush North East coast.
The course is aimed at those who prefer to sharpen their culinary skills on a small one-2-one level with their partner or a friend whilst enjoying plenty of warm hospitality. Guests will be guided on a unique and diverse off-the-beaten-path seasonal experience, connecting ingredients with independent small producers and a cultural history that fuses Arawak, Spanish, British, West African, Chinese & Indian roots into an exciting cuisine with some of the most interesting and varied cooking techniques.
Traditional Jamaican cuisine doesn’t involve intercontinental food miles, it relies on the freshest of local ingredients that are predominantly either organic or bio-dynamic through careful use of the land and co-planting. This is why some of the cooking classes in this course are conducted at the sites where ingredients are grown or fished, including beachside and a rustic setting in the Blue Mountains with the Maroon Community, helping to get to know all parts of Jamaican culture.
The 12-day course is a 2-centre cookery holiday which includes 3 nights at Green Castle Estate, a 1600 acre historic plantation, to help jettison the jet-lag. The other nights will be spent at eco-boutique Mocking Bird Hill, winners of Responsible Tourism’s Best Hotel for the Environment 2010 and recent recipients of a Certificate of Excellence from Trip Advisor. The hotel’s restaurant Mille Fleurs was awarded Jamaica’s “Best Kept Secret” by the Jamaican Observer, so not only will guests enjoy how to cook Jamaican cuisine they will eat possibly some of the very best offered on the island.
Day 1
Arrival in Kingston, transfer to the historic plantation Green Castle Estate for 3-course dinner & overnight stay

Relax & visit the close-by Strawberry Fields Cove for the first dip in the Caribbean Sea | Lunch | Relax poolside and in the gardens | 3-course dinner Green Castle
Day 3
Tour of Coconut Plantation and gift of 1 btl. virgin cold
pressed Coconut oil | Lunch | Visit Crum's Cottage and learn the art of preserving & making traditional pepper jelly, marmalade and jams | Serving of traditional afternoon tea | 3-Course Dinner at Green Castle
Day 4
Breakfast, depart for Charles Town | Learn how Bammy is made and the origins of Jerk with the Maroons | Enjoy a traditional lunch picnic style on riverside | A cultural afternoon learning about Maroon history | Transfer to Mocking Bird Hill | 3-course dinner Mille Fleurs
Day 5
After breakfast spend a relaxing day at the beach: Frenchman's Cove is known as Jamaica's most romantic beach cove | 3-course dinner Mille Fleurs
Day 6
After breakfast tour of the market | Lunch at the adjoining Marina | Afternoon culinary session with House Chef focusing on local, seasonal produce - Jamaican cuisine with a contemporary touch - enjoy the meal you prepare for dinner

Day 8
Hike to the Blue Mountains to visit a coffee estate | Learn about coffee production and roasting | 3-course dinner Mille Fleurs
Day 9
Learn to cook with coffee - variations on the theme :Coffee Crème Brulee, Coffee & Walnut Cake, Coffee and Rum, Coffee & Coconut | Afternoon relax in the garden and by the pool | Finish the day with a 3-course dinner at Mille Fleurs that includes your coffee based dessert
Day 10
Tour to Reach Falls, (for the adventurous we recommend the river walk upstream to the Falls) | Stop for a dip and snack at Long Bay | 3-course dinner Mille Fleurs
Day 11
A relaxing day at a lovely public beach | Learn how to cook Jamaican style curried Chicken, Festival , Salt fish Rundown, Dumplings & Fried Plantain at a local beachside eatery and then enjoy your lunch! | 3-course dinner at Mille Fleurs
Day 12
Transfer to Kingston to Belcour House | Enjoy a guided exploration of the lovely grounds & gardens and a culinary session from home-grown products | End with a lovely lunch and then transfer to airport | Departure home
