Counting our Jamaican Food Miles
These days we all want to get close to the earth, and the buzz words are food miles, local, seasonal, sustainable. Helping these all along is the fact that no matter how good a cook you may be, no matter how great your technical skills are, it is not possible to make wonderful dishes without great tasting products.
Investing Time
The catch to counting food miles is that it takes time; it takes a little longer to investigate the sources of ingredients and that is something we all have less and less of. However with such an investment comes huge rewards, not just the flavours on a plate but sustainable community development.
A Passion for Good Food
Since we first opened Mocking Bird Hill we have made sure that we have invested our time in developing valuable relationships with trusted suppliers. All of these individuals have a passion for either good food or cooking and have managed to make a business out of it whilst contributing to making a positive change in their communities. By them supporting small local farmers they are in turn encouraging sustainable development within each area.
Sustainable Development
Knowing the supplier and enjoying their story adds value to what is on your plate. It gets away from the anonymity of not knowing anything about what you are eating, apart from the fact that it burnt a huge amount of energy spent shipping it across the world. An investment in local seasonal eating connects us culturally, historically, economically to the region that one is spending time in and ensures the surrounding community all benefit from your visit to the hotel or restaurant.
Showcase Time
Through each independent producer & supplier linking together, we feel that together we are a positive force for change and are trail blazers in our own (little) rights. It creates a bridge between urban and the rural. We want to celebrate local, seasonal Jamaican foods, and showcase superior ingredients. Together with our partners, we all share our love of not only good but also natural, earth-friendly food and treat it with the respect it deserves.
